Sage is a perennial bush that can grow up to 60 cm in height. Its leaves are large. It needs full sunlight and requires regular watering. In spring it flowers a lot of spikes with violet flowers. It is a very hardy plant and easy to grow; it likes full sunlight and calcareous soils. It does not like rigid temperatures and long periods without water. Its root system is taproot with thick secondary roots that sprout.
Sage leaves can be picked up and used fresh all year round, except in the coldest periods; if you want to preserve sage, harvest the tips with buds just before flowering and then dry them rapidly.
You can use sage for cooking to add flavour to your recipes, but it has digestive properties as well.
